The taste of South Tyrol

Not only our South Tyrolean dialect is special, but also our way of cooking. Alex loves to combine Mediterranean cuisine with our traditional recipes and conjure up culinary experiences. Easy to prepare, great in taste. But hardly any food is as much for the South Tyrolean cuisine as the "Knödel", dumplings - a South Tyrolean classic. The recipes range from sweet and savory to hearty, handed down from grandma's recipe book, prepared with fresh aromatic herbs from our garden. beetroot dumplings, spinach dumplings, apricot dumplings, bacon dumplings .... The dumpling can be varied at any time of the year, making it a popular all-rounder. In the Val Pusteria, the dumplings are prepared in different ways. Thus, the Ahrntal is known for its pressed dumplings, also called "pressa". What tastes best? In keeping with the season, pressed dumplings with fresh chanterelles.
